As the New Year approaches, celebrations remain incomplete without a grand dinner. Among Bengali households, the mention of pulao and meat is enough to spark excitement. This year, try adding a vibrant twist to your dinner table with Green Pearl Pulao, a delicious and quick recipe made with rice and fresh greens.
Ingredients :
3 cups of cooked rice
1 bunch each of spinach and coriander leaves
3 cups of curry leaves
A handful of mint leaves
Grated coconut
Ginger (1 knob)
4-5 cloves of garlic
Green chilies
2 onions
Cumin seeds
Coriander powder
Garam masala
Sugar, salt, white oil, and ghee
Method:
1. Prepare the Greens: Chop the spinach leaves and steam them in hot water. Blend the spinach, coriander, mint leaves, grated coconut, ginger, garlic, and green chilies into a smooth paste.
2. Cook the Base: Heat a mix of white oil and ghee in a pan. Add dry red chilies and cumin seeds until aromatic. Sauté finely chopped onions until golden brown.
3. Add the Masala: Mix in the prepared green paste along with coriander powder and garam masala. Cover and cook for 2-3 minutes. Stir occasionally until the oil separates.
4. Incorporate Rice: Add cooked rice to the pan and mix well to coat every grain with the green masala. Add a touch of sugar and salt to balance flavors. Drizzle some ghee over the top.
